How you make chocolate chocolatey - well, we think that matters a lot. You can make chocolate sauce out of cocoa powder or even chocolate flavoring. Frankly, the only word we have for that kind of thinking is - ick! We make our sauces using organic, ethically-sourced cacao liquor - the least processed and closest to the heart of the bean form of cacao there is.
It's like this: the bean is picked, fermented, and roasted. Then it's ground into a paste that still has all the luscious cocoa butter, rich flavors, and healthful antioxidants intact. When it cools into chunks – that’s cacao liquor. In the same way that the best coffee beans roasted the best way make all the difference in the quality of your coffee – the cacao liquor we use at Snow Owl imparts a special texture, taste, and quality to our fudge sauces.
We use organic 100% Arriba cacao. Grown only in Ecuador, Arriba beans are classified as gourmet fine aroma beans. Only five percent of all cacao beans in the world can boast this classification. Arriba cacao beans are widely considered the absolute best of the best for their superior taste and creamy smooth flavor complemented by hints of jasmine and berries.
Our cacao liquor is made from organic beans fermented under the equatorial sun, then washed, and dried in warm air enabling the cacao to maintain its highest levels of flavor and nature-given, super-food antioxidants like polyphenols and flavanols.
