A Very Special Ingredient
How you make chocolate chocolatey - well, we think that matters a lot. You can make chocolate sauce out of cocoa powder or even chocolate flavoring. Frankly, the only word we have for that kind of thinking is - ick! We make our sauces using organic, ethically-sourced cacao liquor - the least processed and closest to the heart of the bean cacao there is.
It's like this: Our organic beans are picked and washed, then laid out to ferment in the warm, equatorial breezes. Once dry the beans are ground into a paste that still has all the luscious cocoa butter, rich flavors, and nature-given, superfood antioxidants intact. When the paste cools into chunks – that’s cacao liquor.
In the same way that the best coffee beans, roasted the best way, make all the difference in the quality of your coffee – the cacao liquor we use at Snow Owl imparts a special texture, taste, and quality to our fudge sauces. So it matters what beans we use.
Our beans are organic 100% Arriba cacao. Grown only in Ecuador, Arriba beans are classified as gourmet fine aroma beans. Only five percent of all cacao beans in the world can boast this classification. And, Arriba cacao beans are widely considered the absolute best of the best for their superior taste and creamy smooth flavor complemented by hints of jasmine and berries.
