Poire Belle Hélène

Poire Belle Hélène, or Pear Belle Hélène in English, is a classic French dessert involving poached pears and hot fudge sauce. It can be made well in advance - even the night before - and is relatively easy to prepare. This recipe pairs deliciously with our Button Up Bourbon or Snuggle in the Dark hot fudge sauce. 


Ingredients:
  • 4 pears - ripe but still firm
  • 1/2 c. granulated sugar
  • 1/4 c. packed brown sugar
  • 1 tsp. ground cinnamon
  • 1 tsp. vanilla
  • 4 large pears (with stems intact)
  • 2/3 c. Button Up Bourbon or Snuggle in the Dark Hot Fudge Sauces
  • Optional: Almond slices
  • Vanilla ice cream for serving

Making Poire Belle-Helen:
Place a large saucepan over medium hear and add 1/2 c. water. Add granulated sugar, brown sugar, cinnamon, and vanilla to the saucepan. Bring to a boil and then turn down the heat to a simmer and let cook for about five minutes while whisking constantly until the mixture is brown and has thickened slightly. Whisk in another cup of water and bring to a simmer.

While the liquid is simmering, carve the core out of the bottom of the pears with a small paring knife or spoon and peel the skin, while leaving the stems intact. Place the pears into the liquid and simmer, rotating the pears occasionally for around 15-20 minutes or until tender when poked with a knife. Remove saucepan with the pears and syrup from heat and let cool.

While the pears are cooling in the syrup, warm the jar of Snow Owl Confectioners Hot Fudge Sauce by removing the metal lid and placing in the microwave for 15-20 seconds or by placing the jar in a small pot of water on the stovetop. Stir well. 


Plating Poire Belle-Helen:
Place a pear on each plate standing up and add a scoop of ice cream. Drizzle the hot fudge sauce over the top of the pear and ice cream and finish with a sprinkle of almond slices... Enjoy! Any leftovers can be kept for up to three days.
